Zucchini And Rice Casserole - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 large onion, chopped
    2 lb. zucchini, chopped
    1 tsp. minced garlic
    salt and pepper to taste
    1/2 c. bread crumbs
    2 eggs
    3/4 c. Swiss cheese, grated
    1/2 c. parsley
    2 c. cooked short grain rice
    1/2 tsp. thyme
Preparation
    Saute onion in oil.
    Add zucchini, garlic, salt and pepper. Cook 5 minutes until zucchini is bright green.
    Beat eggs in a large bowl.
    Add cheese, parsley, rice and thyme.
    Add to zucchini mixture and place in a greased casserole.
    Sprinkle with 1/2 cup bread crumbs and drizzle with olive oil.
    Bake at 375\u00b0 for 45 minutes.
