Ingredients

1 peck beets
2 c. vinegar
2 c. sugar
2 Tbsp. pickling spice (wrapped in a piece of old hose)
1 c. water
Preparation

Bring beets to a slow boil; cook until tender and skins peel off easily.
At this stage, you just boil the beets in water and then discard this water.
Boil remaining ingredients together and add beets.
Bring back to a boil.
Pack and seal in jars.
