Nicaraguan Fried Rice - cooking recipe

Ingredients
    1 onion (medium), chopped
    1 carrot, grated
    1 green pepper, chopped
    1 c. rice
    salt to taste
    2 Tbsp. oil
    1 tomato, chopped
Preparation
    Wash and drain rice.
    Set aside.
    In skillet, heat oil and saute onion, green pepper and carrot.
    Add 2 cups water and salt on medium heat until rice is done.
    Three minutes before, spread chopped tomato on top.
    When rice is done, top with lid.
