Apple Bread - cooking recipe

Ingredients
    vegetable cooking spray
    2 c. sugar
    1 c. oil
    3 eggs
    3 c. all-purpose flour
    1 tsp. salt
    1 tsp. baking soda
    1 tsp. cinnamon
    2 tsp. vanilla
    2 c. chopped, peeled baking apples
    1 c. chopped pecans
Preparation
    Preheat oven to 325\u00b0.
    Spray 2 loaf pans with vegetable spray. In a large bowl, using an electric mixer, beat together sugar, oil and eggs.
    In a separate bowl, stir together dry ingredients. Add dry mixture to batter and mix just until blended.
    Stir vanilla, apples and pecans into batter.
    Pour batter into prepared loaf pans.
    Bake for 1 hour or until inserted knife comes out clean.
    Yield: 2 loaves.
