Broccoli Soup - cooking recipe

Ingredients
    3 Tbsp. butter
    1/2 c. onion, chopped
    1 bunch broccoli, sliced
    2 medium potatoes, peeled and diced
    4 c. chicken broth
    salt and pepper to taste
    1/4 c. dried parsley
    1 c. half and half
Preparation
    Melt butter in heavy saucepan.
    Add onion and cook until transparent; do not brown.
    Wash and trim broccoli, peeling the stems.
    Add sliced broccoli, potatoes and broth to onion in pan. Bring to boil and season.
    Simmer, covered, until broccoli is tender, 20 to 30 minutes.
    Add parsley last 3 minutes.
    Drain broth from cooked vegetables and puree the broccoli mixture in blender.
    Combine with broth and refrigerate.
    When ready to serve, stir in the half and half.
    This soup may be served hot or cold.
