Eggplant Casserole - cooking recipe

Ingredients
    1 medium or large eggplant
    salt and pepper
    1 small onion, diced
    2 Tbsp. butter
    3/4 c. milk
    3 Tbsp. shredded sharp cheese
    1 c. crushed crackers
    4 slices American cheese
Preparation
    Pare and slice eggplant. Cook in salted water until tender. Drain and mash.
    Add other ingredients except cheese slices. Place in a greased 1-quart casserole dish.
    Bake at 350\u00b0 for 40 minutes. Arrange cheese slices on top and bake an additional 20 minutes.
    Yields 4 servings.
