Shrimp Provencale - cooking recipe

Ingredients
    1 1/2 lb. large shrimp, shelled and deveined
    1 lb. sliced mushrooms
    2 garlic cloves, minced
    3 medium tomatoes, diced
    2 Tbsp. lemon juice
    salt and pepper
    2 Tbsp. chopped parsley
    3 c. hot, cooked rice
Preparation
    About 45 minutes before serving in a 12-inch skillet over medium heat in 2 tablespoons of oil, cook shrimp, stirring often about 3 minutes until shrimp turn pink; set aside.
    In same skillet, add 1 tablespoon of oil.
    Add mushrooms; cook until tender, about 3 minutes.
    Add tomatoes, lemon juice, salt and pepper.
    Cook 3 minutes more.
    Return shrimp to skillet.
    Heat through.
    Sprinkle with parsley.
    Serve with rice.
