Rice Casserole - cooking recipe

Ingredients
    1 c. rice
    2 1/2 c. tomato juice
    1/2 c. onion, chopped
    1/2 c. green peppers, chopped
    1 lb. raw ground meat
    1/4 - 1/2 c. water
    4 slices bacon
    celery (opt.)
Preparation
    Rinse and drain rice, sprinkle with salt and pepper.
    Pour 1 c. tomato juice over rice, then sprinkle with the onion, pepper, and celery (if wanted).
    Then the meat, water, and 1 1/2 c. tomato juice.
    Cut the bacon in 1/2 and put on top.
    Cover and bake at 350\u00b0F for 1 hour.
    Uncover and bake for another 1/2 hour or until bacon is crisp.
