Scallops With Tomatoes(Microwave) - cooking recipe

Ingredients
    1/2 lb. scallops
    1 Tbsp. instant minced onion
    1 whole green onion, thinly sliced
    1 1/2 Tbsp. sherry wine
    1 Tbsp. tomato paste
    4 plum tomatoes, diced
    2 Tbsp. minced fresh cilantro
    freshly ground pepper to taste
    2 Tbsp. crumbled Feta cheese
    1 1/4 c. cooked rice (without salt)
Preparation
    Pat scallops on paper toweling.
    Place in a microproof 1-quart casserole with onion, wine, tomato paste, tomatoes and cilantro. Toss together until well mixed. Cover with lid or vented plastic wrap and microwave on High 3 1/2 to 4 minutes or until scallops are opaque, stirring once.
    Sprinkle with pepper and Feta cheese. Toss together.
    Spoon over rice in deep bowls. Serves 2.
