Corn Bread - cooking recipe

Ingredients
    1 1/4 c. yellow cornmeal
    3/4 c. all-purpose flour
    1 1/3 Tbsp. sugar
    2 1/2 tsp. baking powder
    1/2 tsp. salt
    1 c. plus 2 Tbsp. low-fat Buttermilk
    1 med. egg
Preparation
    Preheat oven to 400\u00b0: spray 8 inch square, 7x11, or 12 cup muffin tin with nonstick cooking spray.
    In a large bowl, combine the cornmeal, flour, sugar, baking powder, and the salt.
    In a small bowl, beat the buttermilk over the flour mixture; stir just until blended (do not overmix).
    Transfer to the pan.
    Bake until golden brown and a toothpick inserted into the center comes out clean, 20-25 minutes.
    Cool pan on a rack 10 minutes; serve warm. Makes 12 servings.
