Broccoli-Cheese Soup - cooking recipe

Ingredients
    5 Tbsp. oleo, divided
    1/4 c. chopped onion
    1 clove garlic, peeled
    2 lb. fresh broccoli
    1 large rib celery
    1 large carrot, peeled
    4 green onions
    2 1/2 c. chicken broth
    1/4 c. flour
    1/4 tsp. salt
    1/4 tsp. freshly ground black pepper
    dash of nutmeg
    1 1/2 c. skim milk
    4 oz. sharp Cheddar cheese, grated
Preparation
    In heavy 4-quart kettle, melt 1 tablespoon oleo over medium heat.
    Add onion and garlic.
    Saute, stirring until onion is transparent and set aside.
