Eggplant Roll-Ups - cooking recipe

Ingredients
    3 good size eggplants, peeled and sliced 1/8-inch thick lengthwise
    approximately 5 eggs, beaten for dipping
    bread crumbs
    1 to 2 pt. Ricotta cheese
    1 lb. Mozzarella cheese, grated
    favorite spaghetti sauce
    oil for frying (keep bottle handy as eggplant will soak it up)
Preparation
    You will also need baking pans or large foil pans.
