Hoppin Juan Skillet Cakes - cooking recipe

Ingredients
    1 lb. cooked black-eyed peas
    1 1/2 c. cooked brown rice
    1 medium onion, finely diced
    1/4 c. plain, dried bread crumbs
    1/4 c. Weight Watchers fat-free mayonnaise dressing
    2 tsp. chili powder
    1/2 tsp. ground cumin
    1/4 tsp. ground red pepper
    1 Tbsp. plus 1 tsp. olive oil
    1 c. picante sauce
    1/2 c. diced scallions with tops
    2 Tbsp. plus 2 tsp. Weight Watchers ultimate 90 plain nonfat yogurt
Preparation
    Preheat oven to 400\u00b0.
    Spray baking sheet with nonstick cooking spray.
    In medium bowl, coarsely mash black-eyed peas. Add rice, onion, bread crumbs, mayonnaise dressing, chili powder, cumin and red pepper.
    Divide mixture into 8 (1/3 cup) portions. Shape each portion into a 1/2-inch thick patty.
