Chili Sauce - cooking recipe
Ingredients

4 qt. (about 24) peeled, cored, red ripe tomatoes
2 c. chopped onion
2 c. chopped sweet red peppers (4 medium)
1 hot red pepper
1 c. sugar
3 Tbsp. salt
1 Tbsp. celery seed
3 Tbsp. mixed pickling spice
1 Tbsp. mustard seed
2 1/2 c. vinegar
Preparation

Combine tomatoes, onions, sweet and hot peppers, sugar and salt.
Cook gently 45 minutes.
Tie spices in a cheesecloth bag; add them to tomato mixture.
Cook until very thick, about 45 minutes.
As mixture thickens, stir often to prevent sticking. Add vinegar and cook slowly until thick as desired.
Pour boiling hot into jars, leaving 1/8-inch space and seal.
Yield:
6 pints.
