Salmon Steaks With Dill Sauce - cooking recipe

Ingredients
    4 (1-inch thick) salmon steaks
    1 small onion, sliced
    1/2 lemon, sliced
    1 bay leaf
    1/4 tsp. salt
    3/4 c. milk
    1 Tbsp. all-purpose flour
    2 tsp. Dijon mustard
    1/2 to 3/4 tsp. dill seed
    1/4 tsp. grated lemon rind
    1/4 tsp. salt
    dash of white pepper
    1 egg yolk, beaten
    1 Tbsp. lemon juice
Preparation
    Place salmon steaks in 10-inch skillet.
    Add enough water to cover.
    Top with onion, lemon slices and bay leaf; sprinkle with 1/4 teaspoon salt.
    Bring to a boil.
    Cover, reduce heat and simmer for 8 minutes, or until fish flakes easily when tested with a fork.
    Combine milk and flour in a saucepan, stirring well.
    Add mustard, dill seed, lemon rind, 1/4 teaspoon salt and pepper. Cook over medium heat, stirring constantly, until thickened. Gradually stir about 1/4 of hot milk mixture into egg yolk; add to remaining hot milk mixture, stirring constantly.
    Cook 1 minute, stirring constantly.
    Add lemon juice, mixing well.
    Remove salmon steaks from skillet.
    Spoon sauce over salmon.
    Garnish with reserved lemon slices, if desired.
    Yields 4 servings.
