Portuguese Soup - cooking recipe

Ingredients
    2 c. chopped onion
    3 cloves garlic, minced
    6 Tbsp. oil
    1 lb. garlic flavored smoked pork sausage, cut into bite size pieces
    10 c. beef stock
    1 (No. 303) can kidney beans, not drained
    1 head cabbage, cored and cut into medium size pieces
    10 small new potatoes, scrubbed and quartered
    1/4 c. vinegar
    1 (16 oz.) ketchup
    salt and pepper (sparingly)
Preparation
    Saute onion and garlic in oil just until transparent. Add sausage and brown lightly. Add beef stock and all other ingredients.
    Bring to a boil, stirring often. Reduce heat. Simmer for 45 minutes or more, stirring occasionally.
    Makes 1 gallon plus.
