Ingredients

2 c. all-purpose flour
2 Tbsp. pumpkin pie spice
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/2 c. butter, softened
1 c. granulated sugar
2 c. finely chopped tart apples (such as Granny Smith or Cortland)
Preparation

Preheat the oven to 350\u00b0.
Grease a 9 x 5-inch loaf pan.
In a medium bowl, mix together flour, pumpkin pie spice, baking powder, baking soda and salt.
In a large bowl, using a wooden spoon or an electric mixer set on medium speed, beat together butter and sugar until light and fluffy.
Stir in the apples.
Stir flour mixture into the apple mixture until the dry ingredients are just moistened.
Spoon batter into the prepared pan.
Bake until a toothpick inserted in the center comes out clean, about 1 hour. Transfer the pan to a wire rack to cool for 10 minutes.
Turn the cake out onto the rack to cool completely.
