Fried Squid(Calamari Fritti) - cooking recipe

Ingredients
    1 lb. squid, cleaned
    1/2 c. flour
    1 c. olive oil (more if needed)
    salt and pepper to taste
    lemon wedges
Preparation
    Cut
    squid
    into
    rings or 3-inch pieces.
    If tentacles are large,
    cut
    in half.
    Toss the squid in flour mixed with salt and
    pepper;
    coat
    as
    you
    are
    frying, to avoid flour getting soggy.
    In a skillet, heat enough oil to measure about 1
    to
    1 1/2
    inches
    deep.
    When
    the oil is hot, add squid. Lower
    heat just
    a
    little
    and
    continue to fry squid until nicely
    golden. Drain on paper towels.
    The squid should cook in
    2
    to 3 minutes. Place fried squid on platter and garnish with lemon wedges. Makes 2 servings.
