Quick And Easy Rice Jambalaya - cooking recipe

Ingredients
    1 Tbsp. oil
    1 medium onion
    1/2 c. celery
    1 clove garlic, minced
    1 (10 oz.) pkg. frozen cut okra, thawed
    1/4 lb. andouille or other smoked sausage, sliced
    2 whole boneless, skinless chicken breasts, cut into cubes
    1 small green pepper, cut into strips
    1 (8 oz.) can tomato sauce
    1 (14 1/2 oz.) can Cajun-style stewed tomatoes
    2 tsp. Creole seasoning
    1 1/2 c. Minute premium long grain rice (uncooked)
Preparation
    Heat oil in a large skillet on medium-high heat. Add sausage; cook and stir until lightly browned. Add chicken, onion, pepper, celery and garlic; cook and stir until chicken is cooked through. Stir in tomatoes, okra, tomato sauce and seasoning. Bring to boil. Stir in rice; cover. Remove from heat. Let stand 5 minutes or until liquid is absorbed. Stir.
