Chicken With Spicy Fruit Sauce - cooking recipe
Ingredients

1 1/4 c. unsweetened pineapple juice
1/4 c. golden raisins
1/2 tsp. crushed red pepper
2 cloves garlic, sliced
4 (4 oz.) skinned, boned chicken breast halves
1/4 tsp. cornstarch
1/3 c. low sugar strawberry spread
green onion strips (optional)
Preparation

Combine first 4 ingredients in large non-aluminum skillet, bring to a boil.
Add chicken and cover.
Reduce heat and simmer 10 minutes or until chicken is done.
Remove chicken from skillet and keep warm.
Bring cooking liquid to a boil; cook 7 minutes or until reduced to 3/4 cup, stirring occasionally.
Combine strawberry spread and cornstarch; stir into cooking liquid and cook 1 minute or until syrupy.
Spoon 3 tablespoons sauce over each chicken breast, garnish with green onion strips.
Yields 4 servings, 215 calories and 1.5 fat.
