Eggplant Parmesan - cooking recipe
Ingredients

1 c. chopped onion
1 clove garlic
1 (6 oz.) can tomato paste
2 tsp. oregano
2 medium egg plants, peeled and sliced
oil
1 large can tomatoes
1 c. bread crumbs
1 lb. Mozzarella cheese
1/2 c. Parmesan cheese
2 eggs, beaten
Preparation

Saute onion and garlic in small amount of oil until golden brown.
Stir in tomatoes and paste; simmer 30 minutes, stirring often.
Stir in oregano and simmer 30 minutes more.
Mix eggs and salt.
Dip eggplant in eggs; then in bread crumbs.
Fry in oil; drain on paper towels.
Mix cheeses together.
Pour 1 cup mixture in 13 x 9-inch baking dish.
Top with 1/3 eggplant and 1/3 cheeses.
Repeat until used up.
Bake in a 350\u00b0 oven for 45 minutes.
