Ingredients

3 egg yolks
3 egg whites
dash of salt
1/2 c. sugar
1 (9 oz.) can crushed pineapple, drained and saved
2 Tbsp. lemon juice
2 Tbsp. sugar
1 c. heavy whipping cream
2 c. Salerno vanilla wafer crumbs or more
Preparation

Beat egg yolks, salt and 1/2 cup sugar.
Add pineapple syrup and lemon juice.
Cook in double boiler, stirring constantly, until thick.
Add pineapple.
Cool.
