Golden Potato Squares - cooking recipe

Ingredients
    5 lb. potatoes, shredded
    2/3 c. butter
    4 eggs, beaten
    1/4 tsp. pepper
    1 c. shredded Cheddar cheese
    1 1/2 c. chopped onions
    1 can evaporated milk
    2 1/2 tsp. salt
    1/4 c. parsley
Preparation
    Saute onion in butter, add milk and bring to boil.
    Mix remaining ingredients.
    Bake in greased 9 x 13-inch dish.
    Save 1/2 cup cheese to sprinkle on top and bake 30 minutes more.
    Cut in squares to serve.
    Good with ham and cole slaw.
    May be refrigerated overnight before baking.
