Black-Eyed Peas And Spareribs - cooking recipe

Ingredients
    1 small onion, sliced
    1 clove garlic, minced
    2 Tbsp. oil
    1 lb. spareribs, cut into 3-inch pieces
    1 tsp. paprika
    2 (15 oz.) cans black-eyed peas, drained
    1 c. water
    1/2 c. dry white wine
    1 (16 oz.) can tomatoes
    1/2 c. chopped green pepper
    2 Tbsp. packed brown sugar
    salt and pepper to taste
    2 tsp. chili powder
Preparation
    Saute onion and garlic in oil in 4 or 5-quart pot or skillet. Add spareribs and brown.
    Sprinkle with paprika, add peas, water and wine.
    Cover and simmer 1 hour, until ribs are tender.
    Add tomatoes, green pepper, brown sugar, chili powder, salt and pepper.
    Cover and cook slowly for 30 to 45 minutes.
    Serves 4. Good over rice.
