Butternut Squash - cooking recipe

1 butternut squash, halved and seeded
3 Tbsp. butter
fresh rosemary and thyme
grated nutmeg
salt and pepper
honey
Preparation

Place squash, cut side up, in shallow roasting pan. Place 1 tablespoon butter in each half. Place seasonings on each half. Cover pan with aluminum foil and roast 1 1/2 hours at 350\u00b0. Remove herbs, spoon squash into a bowl and mash until very smooth. In a saucepan, add honey and remaining butter; add seasonings and warm through before serving.
