Hop'N John And Rice - cooking recipe

Ingredients
    1 lb. black-eyed peas
    1 sprig thyme
    1 Bermuda onion
    2 c. uncooked rice
    1/2 lb. bacon, chopped
    salt and pepper
Preparation
    Boil beans and thyme in 2 quarts of water until peas are tender.
    Dry onions and bacon until brown.
    Add to peas; add rice. Season with salt and pepper.
    Cover tightly over low heat about 3/4 hour.
