Shrimp Pie - cooking recipe
Ingredients

1 c. cooked, shelled shrimp
salt and pepper
pinch of tarragon
3 large eggs, blended with enough milk or cream to make 1 1/2 c. in all
3 Tbsp. grated Swiss cheese
2 Tbsp. butter
1/4 c. dry white vermouth
1 (8-inch) baked pie shell
Preparation

Saute the shrimp with the butter and seasonings for 1 minute. Add the vermouth and boil for 1/2 minute.
Strew shrimp in pie shell.
Make custard with eggs and milk or cream.
Pour in custard to within 1/8-inch of rim; sprinkle on cheese.
Bake 30 to 35 minutes at 375\u00b0 or until puffed and browned.
