Greek Roasted Chicken - cooking recipe
Ingredients

1 roasting chicken (6 lb.)
salt and pepper to taste
3 tsp. dried oregano, divided
3/4 c. chicken broth
4 to 6 peeled, quartered potatoes
1/4 c. margarine, melted
3 Tbsp. fresh lemon juice
Preparation

Place chicken on a rack in roasting pan.
Season with salt and pepper and 1 1/2 teaspoons oregano.
Arrange potatoes around chicken; sprinkle with salt, pepper and oregano.
Pour butter and lemon juice over chicken and potatoes.
Add chicken broth to pan bottom.
Bake at 350\u00b0 for 2 to 2 1/2 hours.
Baste with juices while baking.
