Squash Casserole - cooking recipe

Ingredients
    2 lb. yellow squash
    1 onion, chopped
    1 tsp. salt
    1/2 tsp. lemon pepper
    1 c. water
    2 eggs, beaten
    1/2 c. cream or can of evaporated milk
    1/4 c. margarine pieces
    cheese, sliced or grated, to cover top
    18 saltine crackers, crushed
Preparation
    Simmer squash, onion, salt and pepper until tender.
    Remove from heat.
    Add crackers, cream, margarine and beaten eggs.
    Pour into well buttered casserole dish.
    Bake at 350\u00b0 for 30 minutes or firm to touch.
    Cover with grated cheese and bake until cheese is melted and lightly browned.
