Ratatouille - cooking recipe

Ingredients
    1 1/2 Tbsp. olive oil
    2 cloves garlic, minced
    2 medium onion, thinly sliced
    3/4 lb. eggplant, peeled and diced
    1/2 lb. zucchini, unpeeled and sliced
    1 sweet green pepper, sliced into rings
    2 tsp. Italian seasoning
    1 tsp. sugar
    salt (optional)
    pepper to taste
    4 medium fresh or canned tomatoes, peeled and sliced
Preparation
    Heat oil in heavy duty saucepan, add garlic, onion, eggplant, zucchini and green pepper; saute vegetables until they are barely tender.
    Add seasoning, mixing well.
    Add tomatoes and simmer until tender, about 20 to 25 minutes.
