Baked Eggplant Parmesiana - cooking recipe
Ingredients

5 medium size eggplants, washed and sliced into very thin pieces
well beaten egg
seasoned bread crumbs
oil for frying
your favorite tomato sauce
grated Mozzarella cheese
dried oregano
Preparation

Dip each slice of eggplant into well beaten egg and into seasoned bread crumbs.
Fry breaded eggplant slices in medium to hot oil in frying pan, 2 minutes on each side.
Drain cooked eggplant slices on paper towels.
Layer in glass baking dish some of your favorite tomato sauce, then all of the cooked eggplant. Top with more sauce and finish by topping with some grated Mozzarella cheese and dried oregano.
