Copper Pennies(Carrots) - cooking recipe

Ingredients
    1 pkg. young carrots, thickly sliced
    2 medium onions, sliced
    1 large bell pepper, chopped
    1/2 c. salad oil
    1/2 c. sugar
    1/2 c. apple cider vinegar
Preparation
    Steam carrots until a fork pricks them easily.
    Boil the sugar, oil and vinegar together for 2 to 3 minutes.
    Pour carrots, onions and pepper into boiled mixture, stirring to coat them well.
