Sauerkraut Soup - cooking recipe
Ingredients

1 lb. smoked sausage, cut in 1/2 inch pieces
5 medium potatoes, peeled and cubed
2 medium onions, chopped
2 carrots, cut in 1/4 inch slices
3 cans (14 oz. each) chicken broth
1 large can tomatoes
1 can (32 oz.) sauerkraut, rinsed, drained and cut with scissors
Preparation

In large soup pan, combine sausage, potatoes, onion, carrots and chicken broth; bring to a boil.
Reduce heat and simmer 30 minutes or until potatoes are tender.
Add sauerkraut and tomatoes. Return to boil.
Reduce heat and simmer 30 minutes longer.
If thinner soup is desired add more broth.
