Gazpacho(Heart Healthy) - cooking recipe

Ingredients
    1 large (46 oz.) can tomato juice
    2 cucumbers, peeled and diced
    2 green bell peppers, diced
    2 tomatoes, chopped
    5 to 6 Tbsp. lemon juice
    2 large cloves garlic, minced
    2 Tbsp. finely chopped cilantro or parsley (fresh; more, if desired)
    2 Tbsp. olive oil
    1/2 tsp. cumin powder
    1/4 tsp. black pepper
    Tabasco to taste
    1 diced avocado
Preparation
    Combine in large bowl. Chill for several hours. Serve ice cold.
