Lobster Supreme - cooking recipe

Ingredients
    3 (1 1/2 lb.) lobsters
    4 Tbsp. butter
    1/2 tsp. paprika
    dash of cayenne pepper
    dash of nutmeg
    1/2 c. dry sherry
    1 1/2 c. heavy cream
    4 egg yolks, beaten
Preparation
    Cook lobsters 20 minutes in boiling salted water to cover. Saute lobsters 3 minutes in butter.
    Add seasoning and sherry. Cook until wine is reduced to 2 tablespoons.
    Blend in cream and egg yolks.
    Add lobster; cook over low heat until sauce thickens. Serve on 6 slices of golden brown toast.
