Somerset Spread - cooking recipe
Ingredients

1 lb. sharp Cheddar cheese, grated
1/2 lb. cream cheese (room temperature)
1/2 c. dry sherry
1/4 c. finely chopped chives
2 Tbsp. brandy or cognac
Preparation

Combine all ingredients in large bowl.
Mix with wooden spoon or electric mixer until smooth and spreadable.
Spoon into a crock and cover tightly.
Chill several hours or overnight.
Will keep 2 to 3 weeks.
Makes 4 cups.
