Dajaj Pilaf (Chicken)(Middle Eastern Feast Dish) - cooking recipe

Ingredients
    3 lb. chicken
    8 c. water
    1 tsp. salt
    3 Tbsp. cinnamon
    2 c. long grain rice
    1/2 c. dried apricots
    1/2 c. raisins
    1/2 c. nuts (almonds, walnuts or cashews)
    1/4 c. butter
    2 Tbsp. oil
Preparation
    Place chicken, water and spices in large heavy kettle (Dutch oven).
    Boil over high heat, skimming fat for 5 minutes.
    Reduce heat; simmer 1 hour.
    Drain chicken; reserve stock. Debone chicken.
