Scalloped Eggplants - cooking recipe

Ingredients
    1 medium egg plant
    1 beaten egg
    1/2 c. milk
    2 tbsp. melted butter
    1 chopped onion
    1 c. cracker crumbs
    1/2 c. cracker crumbs for topping
Preparation
    Peel egg plant and cut in 1 inch cubes.
    Cook in boiling salted water and drain.
    Add eggs, milk, butter, onion and 1 c. of crackers.
    Place in greased quart baking dish.
    Top with cracker crumbs.
    Bake for 30 minutes at 350 degrees.
    Easy and good.
