Rhubarb Cake - cooking recipe

Ingredients
    1/2 c. margarine
    1 1/2 c. brown sugar
    1 egg
    1 tsp. vanilla
    1 c. buttermilk
    1 tsp. baking soda
    1/2 tsp. salt
    2 1/2 c. flour
    2 c. chopped rhubarb (or more!)
Preparation
    Blend margarine, brown sugar, egg and vanilla in a large bowl. Mix dry ingredients in a separate bowl. Put dry ingredients into margarine/sugar mixture.
    Add buttermilk.
    Mix well. Stir in rhubarb. Spread into greased and floured 9 x 13-inch pan. Sprinkle with mixture of 1/4 cup white sugar and 1 teaspoon of cinnamon. Bake at 350\u00b0 for 45 minutes or until toothpick comes out clean.
