Kansas Style Enchiladas - cooking recipe
Ingredients

1 lb. hamburger meat
1 link chorizo (Mexican sausage)
1 c. chopped onions
2 c. diced, boiled potatoes
1 can sweet peas, drained
2 c. grated Cheddar cheese
2 (10 oz.) cans enchilada sauce
2 doz. corn tortillas
Preparation

Cook hamburger meat and chorizo together; drain grease off. Combine with vegetables and 1 cup of cheese.
Dip tortillas in hot oil until soft, then dip in heated enchilada sauce.
Fill dipped tortilla with mixture, then roll and place in baking dish.
Spread with remaining sauce and cheese.
Put in oven until cheese melts and enchiladas are hot.
This is my Mother's recipe.
