Ingredients

3 to 4 medium onions
3 Tbsp. butter
1 Tbsp. flour
3 c. vegetable/chicken stock
dash of cloves, marjoram and ginger
bay leaf
4 slices French bread
grated cheese
Preparation

Finely chop onions.
Melt butter in a thick saucepan.
Add onions and brown slowly and well.
Dust in flour and pour in stock.
Simmer for 1/2 hour; add seasonings and bay leaf.
Put French bread at the bottom of a casserole.
Pour on the boiling soup.
Dust thickly with the grated cheese, then set in 350\u00b0 oven for 10 to 15 minutes to brown.
Serve very hot.
