Peanut Butter Loaf - cooking recipe

Ingredients
    1 c. plus 2 Tbsp. all-purpose flour
    1/3 c. granulated or firmly packed light or dark brown sugar
    1 Tbsp. double-acting baking powder
    1 c. skim milk
    1/3 c. less 1 tsp. chunky peanut butter
    1/4 c. margarine
    1 egg
    2 tsp. vanilla extract
Preparation
    Spray

    3-inch loaf pan with nonstick cooking spray; set aside.
    On paper plate or sheet of wax paper combine dry
    ingredients;
    set aside.
    Preheat oven to 350\u00b0.
    In medium bowl,
    using
    a
    wire whisk or fork, combine remaining ingredients, beating until egg is blended (peanut butter and margarine will
    be
    lumpy).
    Stir in dry ingredients, stirring just until moistened.
    Pour into sprayed pan and bake for 45 to 50 minutes (until
    loaf
    is
    golden and a cake tester, inserted in center, comes
    out dry).
    Set loaf in pan on wire rack for 5 minutes to cool
    slightly,
    then
    invert
    onto
    rack for 5 minutes to cool slightly,
    then
    invert
    onto
    rack.
    Remove
    pan
    and let cool completely.
    To serve, cut into 12 equal slices.
