Gourmet Potatoes - cooking recipe
Ingredients

8 large baking potatoes, boiled in jackets, cooked and grated
1 medium onion
1/2 c. margarine
2 c. shredded Cheddar cheese
2 c. sour cream
salt and pepper to taste
Preparation

Melt margarine.
Cook onions until soft.
Mix together Cheddar cheese and sour cream.
Add onions, salt, pepper and potatoes. Mixture will be stiff.
Place into large casserole dish.
Bake for 45 minutes at 400\u00b0 or until top is brown.
This is best made ahead of time and let set, then cool.
Good warmed over and easily halved for smaller families.
