Pinto Fiesta Cake - cooking recipe

Ingredients
    2 c. mashed unseasoned pinto beans
    1 c. sugar
    1/4 c. butter
    3/4 c. egg substitute
    1 c. unsifted flour
    1 tsp. baking soda
    1/2 tsp. salt
    1 tsp. cinnamon
    1/2 tsp. ground cloves
    1/2 tsp. allspice
    2 c. chopped raw apple
    1 c. raisins
    1/2 c. chopped walnuts or pecans
    2 tsp. vanilla
    1/2 tsp. raspberry jelly
Preparation
    Cream together sugar and butter.
    Add eggs and mix well.
    Add beans and mix well.
    Sift together flour, soda, salt, cinnamon, cloves and allspice.
    Add dry ingredients to bean mixture and mix well.
    Add apples, raisins, nuts and vanilla.
    Spoon mixture into well-greased 10-inch tube pan (or 2 loaf pans).
    Bake at 375\u00b0 for 45 minutes (check for doneness with toothpick).
    Cool in pan about 20 minutes and remove from pan.
    Melt jelly and spoon over the top. Decorate with walnut halves, if desired.
    Makes 12 servings.
