Zucchini Cutlets - cooking recipe

Ingredients
    1/2 c. chopped onion
    2 c. crushed crackers
    3/4 tsp. salt
    3 c. shredded zucchini
    1/2 c. grated carrot
    1 tsp. baking powder
    1/3 tsp. pepper
    1/2 c. pepper (green or red), chopped (optional)
    1 clove garlic (optional)
Preparation
    Combine together and add 2 eggs; mix well.
    Heat 1/4 cup oil in frying pan; drop by large spoonful into oil.
    You can also shape into patties first, then fry, turning once.
