Fried Potatoes - cooking recipe

Ingredients
    4 or 5 medium potatoes
    2 small onions
    2 eggs, beaten
    1/2 c. diced, cooked ham or other leftover meat
    salt and pepper to taste
    1 Tbsp. corn oil
    1/2 c. water
Preparation
    Slice unpeeled potatoes.
    Peel and chop onions.
    Put oil in cold skillet and heat to about 300\u00b0.
    Scatter potato slices over bottom of skillet.
    Cover and cook about 5 minutes.
    Turn potatoes over and brown other side in covered frypan about 2 or 3 minutes. Uncover, add chopped onions and water.
    Replace cover and cook 3 minutes longer.
    Uncover and add eggs and meat.
    Stir until eggs are cooked.
    Serve warm.
