Mussels In White Wine Sauce - cooking recipe

Ingredients
    2 lb. mussels, washed and debearded
    1 small onion, diced
    1 small tomato, peeled, seeded and diced
    1 Tbsp. fresh chopped parsley
    1 clove garlic, chopped
    1/4 c. white wine (dry)
    3 to 4 oz. cold butter, cubed
    salt and pepper
Preparation
    Melt 1 tablespoon of the butter in large pot (big enough to hold mussels).
    Add onion and parsley.
    Cook over medium heat until fragrant.
    Add garlic and wine.
    Cook about 1 minute.
    Add mussels and tomatoes.
    Cover and cook until mussels have opened (3 to 5 minutes).
