Veal Scallopini - cooking recipe
Ingredients

2 lb. veal, thin cut
1 pkg. fresh mushrooms, sliced
2 Tbsp. capers
1 jar artichoke hearts (pickled in jar)
2 pkg. green onions, sliced or chop all
1 1/2 c. red cooking wine
dash of Worcestershire
Preparation

Cut veal into strips (two fingers wide).
Rinse strips to moisten.
Dip in bread crumbs and brown (medium).
Pour off excess fat.
Saute green onions and mushrooms until clear.
Add browned meat, wine and Worcestershire; simmer until vegetables reach desired stage.
Serve with rice.
Serves 4 to 6.
