Ingredients

2 lb. peeled raw potatoes
1 Tbsp. salt
2 Tbsp. flour
3 eggs, separated
1 c. milk
1/2 c. finely grated onion (optional)
oil for frying
Preparation

Grate raw potatoes into bowl of cold water.
Shortly before frying squeeze potatoes using thin white cloth.
Place potatoes in bowl.
Add salt, flour, egg yolks and milk.
Add onions, if desired.
Beat egg whites until stiff.
Fold into potato mixture.
