Queen'S Pralines - cooking recipe

Ingredients
    1 heaping kitchen spoon sugar
    2 c. sugar
    3/4 c. milk
    pinch of soda
    1/3 stick margarine
    1 tsp. vanilla
    2 c. pecans
Preparation
    In heavy skillet over medium heat, cook kitchen spoon of sugar until carmelized and medium brown color.
    In large saucepan, cook 2 cups sugar and milk until it boils; remove from heat and add soda.
    Stir thoroughly (mixture will be frothy).
    Return to heat and again bring to rolling boil.
    Remove from heat and stir in carmelized sugar; stir well.
    Return to heat and cook to soft ball stage, stirring frequently.
    Then add margarine, vanilla and pecans.
    Stir until mixture starts to harden and loses its gloss. Drop by spoonful onto waxed paper.
    (I place pan in cold water to speed hardening.)
    Makes 18 to 24 pralines depending on size desired.
